A ripening chamber is an insulated room where bananas, mangoes, papayas and other fruit are ripened evenly under controlled temperature and humidity, with a measured dose of ethylene gas and regular ventilation to clear CO2. The chamber's own system doses ethylene; the ripening result depends on holding temperature, humidity and CO2 on target through every stage. Banana ripening temperature, humidity and CO2: typical cycle conditions
These are typical figures used by ripening operators, given as guidance. Follow the schedule from your chamber supplier and adjust for variety, origin, fruit maturity and the colour stage your customer wants.
- Banana: roughly 14 to 18 °C pulp temperature through the cycle, warmer at the start to trigger ripening and cooler as colour develops
- Relative humidity: about 85 to 95 % RH to limit weight loss and peel damage
- Ethylene: dosed by the chamber system at the start of the cycle for a set exposure time
- CO2: kept below about 1 % by timed fresh-air ventilation, because CO2 build-up delays ripening
- Mango: similar principles, usually a little warmer for most Indian varieties; Alphonso, Banganapalli, Kesar and Dasheri each have their own recommended schedule
- Chilling risk: bananas held below about 13 °C develop chilling injury, so low limits matter as much as high ones
Uneven ripening and chilling injury
Uneven ripening is the most common complaint about a ripening chamber. It usually comes from temperature differences inside the room: pallets near the cooling unit run cooler than pallets at the back, and fruit heats itself as it respires, so a room that was even at loading may not be even on day three. Measuring at more than one point, and watching the trend through the cycle, shows when airflow or loading is the problem.
Chilling injury is the opposite failure. A controller that overshoots on cooling, or a set point entered wrongly, can hold bananas below their safe limit for hours. The damage shows up later as dull, greyish peel that buyers reject. A low-temperature alarm on each chamber turns an unseen overnight mistake into an SMS on the operator's phone.
CO2 build-up and ethylene: what we measure and what we do not
Fruit gives off CO2 as it ripens. In a tightly sealed room CO2 rises until the ventilation cycle flushes it out, and if that cycle is skipped or the fan fails, ripening slows and the ethylene dose is wasted. The IBI-A-C485 is an NDIR CO2 sensor with a 0 to 10,000 ppm range and RS485 MODBUS output, which covers the typical target of keeping CO2 below about 1 %.
Ideabytes IoT does not supply an ethylene sensor. Ethylene is dosed and controlled by the chamber's own system; our sensors and loggers record the temperature, humidity and CO2 around that dosing so you can see whether each cycle ran as planned. That is why we describe the system as ethylene-ready CO2 control rather than ethylene measurement.
Ripening chamber temperature and humidity monitoring for multi-chamber sites
Most commercial banana ripening chamber projects have several rooms on different stages, so each room needs its own readings and its own limits. The IBI-A-TH485 RS485 temperature and humidity sensor covers -30 to 70 °C and 5 to 95 % RH, and several sensors can be daisy-chained on one RS485 line to an IBI-CSC50R Wi-Fi gateway or an IBI-CSC50RM 4G gateway. Each gateway reads up to 15 RS485 MODBUS devices and up to 30 parameters, which is enough for a temperature, humidity and CO2 sensor in several chambers.
For small sites or a single room, a stand-alone logger is simpler: the IBI-WTH70 or IBI-WTH120 over Wi-Fi, or the IBI-MTH120 over 4G where the pack house has no reliable network. The IBI-MTH120 and IBI-WTH120 measure humidity in condensing conditions, which suits the high-RH end of a ripening cycle.
Ripening room monitoring: where to place the sensors
Air in a ripening room is forced through the pallets by the cooling unit and returns along the ceiling or the aisle. Place the temperature and humidity sensor in the return air path, where it sees air that has passed through the fruit, and keep it out of the direct discharge from the evaporator. In larger rooms, a second sensor near the pallets furthest from the cooling unit shows whether airflow is reaching every position.
Mount the CO2 sensor at breathing height away from the door and the fresh-air inlet, so ventilation cycles show as a clear drop in the trend rather than a spike. Keep sensors clear of water from humidifiers and of forklift paths, and record their positions so readings stay comparable from one cycle to the next.
MODBUS integration with chamber controllers
Many ripening chamber controllers expose their readings over RS485 MODBUS RTU. Where the controller supports it, the IBI-CSC50R or IBI-CSC50RM gateway can read those values alongside our own sensors, so the controller's set points and the independent sensor readings appear on one dashboard. Mapping a controller's registers is configured per project, so share the controller make and model at the enquiry stage.
An independent sensor is still worth having even when the controller reports its own values. If the controller's probe drifts or is placed badly, the second reading shows the difference before a batch is lost.
Alerts, batch records and FSSAI
Limits can be set for each chamber and each stage: a high and low temperature band, a humidity band and a CO2 ceiling. Alerts go by SMS and app notification to the operator on shift, then to the site manager if nobody responds. Every alert and acknowledgement is logged.
Retail chains, quick-commerce warehouses and exporters increasingly ask ripening suppliers to show how each lot was handled. Daily PDF reports and per-cycle trend graphs give that evidence, and FSSAI-licensed businesses can keep them as part of their food safety records.
